How to Make Green Beans in Sherry-Bacon Cream Sauce

Sherry gives this side a pop of brightness, but white wine vinegar works too.

Ingredients

  • 4 oz. bacon, chopped
  • 1 ½ lbs. green beans
  • 2 shallots, chopped
  • 2 cloves garlic, minced
  • 2 Tbs. sherry
  • 1 cup heavy cream
  • 2 tsp. cornstarch

Instructions

  • In pan over medium-high heat, cook bacon until crisp. Transfer to bowl. Add beans to pan; sauté 10 min., stirring. Transfer beans to platter.
  • In same pan over medium heat, cook shallots and garlic in bacon fat 5 min. Add sherry; cook 2 min. Whisk in cream; let simmer 5 min. Add cornstarch; let simmer 5 min., whisking. Season to taste with salt and pepper. Pour sauce over beans; top with bacon.
